Preheat oven to 400°F (205°C)

Remove the goose legs from their fat (keep it 😏)

Place them on a baking sheet, skin side up

Bake for 15 to 20 minutes, until thoroughly hot and the skin begins to brown
Serve with a bowl of warm Saint-Jules sauce for dipping!
