Leaves are falling, temperatures are dropping day by day, and the Au Gîte des Oies team is preparing for winter after a fantastic summer season hosting you and sharing our passion for geese on our enchanting site. Furthermore, the owner, Safia Barrou, has just won 3 awards at the Gala des Agricultrices du Québec and the Gala de La Relève Alimentaire of the Fondation Initia, highlighting her sustained efforts and unparalleled motivation at the helm of
the agricultural enterprise.

What do we do with our geese and birds in winter?
Our breeding geese enjoy going outside all winter, but they also always have access to the recently built aviary when they need shelter. And our famous multi-species barnyard, affectionately called "Party Mix", is in the process of integrating its winter shelter, which it will share with our couple of swans, forever in love.

It's time to order your whole geese for the Christmas season! You have until November 30th to reserve, and quantities are limited. Simply write to us at info@augitedesoies.ca to reserve.


Roast goose was a dish of choice for all great celebrations in Quebec. Delve back into this 2012 La Presse article with culinary historian Michel Lambert, who recounts its origins in Quebec, with an excerpt here:
"Domestic geese are mentioned in historical texts as early as the French occupation, from 1608 to 1629. Geese were traditionally slaughtered in late autumn or early winter, just before pigs.
In many mythologies, the goose was an important symbol linked to the cycle of light and life.

At the time, eating goose at the winter solstice symbolically meant appropriating the sun before it departed elsewhere. The goose has therefore always been associated with major celebrations."
